FRENCH ONION SOUP

 

SERVES 4

COOKING TIME 45-60 MINS

PREPERATION TIME 5 MINS

 

Ingredients

 

1 whole onion (peeled, 1\4 and sliced)

1 1/2 pints of beef stock

125 mls red wine

1 teaspoon oil

Large croutons topped with melted cheese (top hat)

Salt and pepper to season

 

Method

Place a saucepan on the stove and heat; put the oil in the pan followed by the onions. Keep cooking until the onions start to turn brown and burn slightly. Pour in the red wine and reduce till there is almost none left, now pour over the onions and leave to cook for 45 minutes. To make the top hats heat a frying pan on the stove with a little oil in it, take a slice of bread cut off the crusts and then quarter it. Cook in the frying pans for approx. 1 minute each side or until golden brown, take out and drain on some kitchen paper. Place a small amount of grated cheese on top and grill until melted, then place to one side until the soup is served, they are just floated on top of the soup.
